Raisin Bran Muffins



My Mother In Law, Alice Bennett, passed down to me, this recipe for Raisin Bran Muffins. They are very easy to make. My husband loves them. I was up very early this morning because both my husband and I have very bad chest colds. I could not sleep. It was so cold here too, -3 degrees at 5 A.M.! I decided to make the muffins! The batch makes about 72-80 regular size muffins. IF you do not bake all the batter at once it will keep in the refrigerator covered for one to two weeks. Then you can bake as many you feel like eating at the time! Here is the recipe in case you want to try these delicious muffins:

4 eggs beaten

1 cup oil

1 Quart Buttermilk

1 tsp. salt

3 cups sugar

5 cups flour

5 tsp. baking soda

1 15 oz. Box of Raisin Bran

Beat eggs, add in oil, buttermilk, mix together. Add in dry ingredients, other than Raisin Bran, mix well (You can use a mixer up to this point). Now add in Raisin Bran and mix by hand until blended. Put in muffin tins, either with liners, or can use PAM spray.

Bake at 400 degrees for about 20 minutes. Can freeze too!

I made the entire batch and Gary took 24 to work so he could share with fellow employees.

PS ! Yvonne asked if I named the squirrel so my first reaction was nah! Then thought the way he climbs YEAH! His name is MONKEY! Hahaha!!!
